Maybe the disciples were hallucinating
The common characteristics of hallucinations don't match up well to the descriptions we have of the appearances of Jesus to the disciples. Hallucinations tend to come to somebody who is anticipating and dwelling on a certain event, like a mother whose only child has gone off to war. Desperately eager for her son's return, she imagines him walking through the door one night. But, the disciples weren't anticipating a resurrection-type event. They had gone back to their fishing. They had given up.
